Here’s a breakfast idea for all you egg lovers!
- 2 stems worth of kale leaves, washed + torn
- 2 eggs
- garlic salt + pepper
- extra virgin olive oil
- Sautee kale [over medium] with a little olive oil, garlic salt + pepper.
- Turn heat down to medium-low.
- Crack eggs in a bowl and whisk.
- Pour on top of kale and twirl around in pan for even cooking.
- Cover with lid until eggs are cooked through. I do not scramble them. Leave 5-8 min.
- Slide out of pan onto plate.
Add tomatoes for garnish!
